Meal Plans for a Stay Home Order: Volume 3

This week Dave took the opportunity to try lots of new recipes, most of which were deemed “keepers.” (A keeper is a recipe that all of us like, or a recipe that gets at least 2 votes including at least 1 kid vote and are deemed easy enough to go into rotation. This makes it sound much more formal than it is!)

Saturday: Curried beef handpies with mixed green salad

Dave made the pizza dough but I’m sure you could use pre-made. Everyone loved these!

Sunday: Easter dinner! Spiral ham, roast potatoes, steamed green beans, and tarragon shallot egg salad sandwiches (this is my favorite recipe from the Gourmet cookbook, which was a house warming gift from my friend Marni when Dve and I moved to our Brooklyn row house in 2005!)

Monday: Scallion noodles with ground pork plus sauteed snap peas

Tuesday: Mexican chopped salad (add corn muffins on the side if you don’t mind the gluten)

This has been a favorite for years. I start to crave it with the first hints of spring.

Wednesday: Chile pineapple pork chops with steamed or roasted broccoli

This was easy and good. Don’t skip the red onions. Aldi tends to have pineapple for a much better price point than other stores!

Thursday: Zucchini fritters with dill yogurt and simple sauteed chicken

Shockingly, the kids deemed this the best way to eat zucchini (which they hate)

Friday: Pulled chicked with chipotle chilies plus corn (we warmed up frozen) and rice

Dave and I thought this was good if not exciting, but both kids deemed it a keeper. We squeezed lime on it for a bit of acid and some of us topped it with feta (cotiga would be perfect) or guacamole (which we have been buying pre-made form trader joes). Dave used the pressure cooker but there is also a slow cooker option
