Meal Plans for a Stay Home Order: Volume 5

The pace of a week seems to be picking up. This week felt almost normal and I am again amazed at how quickly we humans can acclimate to—well, whatever it is.

Getting a jump on this post Friday evening so I can be sure to leave time for my zoom yoga Saturday morning. (Perfect example of adapting: my yoga instructor loathes technology yet here she is, with her studio offering more zoom classes every week. Check it out here.)

Here’s your recipe line up:

Saturday: Chipotle-cashew chicken with rice

An oldie but a goodie. This was my introduction to Rachel Ray. I skip the grill seasoning if I don’t have it on hand.

Sunday: Spaghetti with meat sauce and roast asparagus

This is “my” meat sauce recipe. (Dave has “his.” We each prefer our own, but he made mine this time and felt it was acceptable when he makes it.) We use whatever tomatoes we have—crushed, diced, whole/squeezed—and sometimes we don’t have the tomato sauce and it all works out. Don’t skip the red wine, though.

For roast asparagus we toss in olive oil, salt and pepper, and go high heat (450) for shorter cook time (8-10).

Monday: Butter chicken with rice and steamed broccoli

New recipe. Keeper. Make sure to line the pan with foil—we were out and everyone is still playing not it with the pan.

Tuesday: Couscous with Artichokes, Feta, and Sun-dried tomatoes

I don’t even particularly like artichokes or sun dried tomatoes, but this is one of those recipes where the whole is greater than the sun of its parts. Also, I love Israeli Couscous. It used to be hard to find but I feel like may grocery stores carry it now. If you can’t find it, orzo might be a better substitute than regular couscous.

Wednesday: Crispy sesame pork

Essentially an Asian-inspired fried pork salad. Why don’t we make this more often?

Thursday: Fish tacos and refried beans

Bake frozen tilapia, warm up canned refried beans, stuff flour or corn tortillas with favorite toppings.

Friday: Chipotle-Cheddar Sweet Potato Hash

We love a hash, and 3 of the 4 of us love BFD (Breakfast for Dinner). New recipe, universally voted into the repertoire.
