Meal Plans....Volume 11

One day late! To be honest I completely forgot about this yesterday. I did not make me new meal plan for a new week because we started early and spent the whole day on a landscaping project.

Groceries are dicey in my neighborhood right now, so we are keeping it relatively simple. Dave brought home a few things from a grocery store near his work, in a suburb largely untouched by the recent unrest, and we backed into a plan.

For those of you in the Twin Cities, lots of people don’t have access to groceries right now. If you want to donate or volunteer, here is a link to an interactive aid map.

You can filter by “open for receiving donations” to find a site near you. Many of them list their most urgent needs.

Sunday: Pizza

I know, starting off with a bang. We took the kids swimming at my parents and tried to go to their grocery store, not realizing all the Cub stores were closed. So we turned to the freezer.

Monday: Cauliflower Gratin (we had leftover bechamel to use up) and grilled sausages

Talk about comfort food. The kids would have preferred mac n cheese but I thought this was great.

Tuesday: One pot pasta with ham and broccoli

I have included this before. Every time we make it we are all delighed by how good it is, especially for being so very easy.

Wednesday: Char Sui Pork roast with rice and roast carrots

Chinese bbq. An old favorite I haven’t made in ages! The recipe calls for marinating but I didn’t see that until it was time to load up the slow cooker. I just skipped it and dumped everything in the pot together and it was fine. For the carrots I made our favorite roasted carrots with paprika, only instead of paprika I subbed five spice and garlic powder to better align with the pork.

Thursday: Take out from Blue Door

In honor of Eleri’s “passage ceremony” to Junior High. For the home cook, burgers, fries and tots! Or make a version of nacho tots

Friday: shrimp and broccoli stir fry

Basically found a recipe for which we had all the ingredients on hand. I also threw in carrots because we have a giant bag of them.

Saturday: pu pu platter

We were basically out of food so we did an appetizer platter of what we had in the freezer: gyoza, tamales, cauliflower tots (total impulse purchase, surprisngly delicious),

I just made the next plan and it is a little more inspiring than this one. We shall see if Dave can get all the ingredients.
