Meal Plans...Volume 9

I suppose it is incorrect to keep calling this Meal Plans for a Stay at Home Order since the order was lifted (at least here in Minnesota). But frankly I didn’t want to relinquish my numbering system, so here we are with an ellipses. You fill in the blank.

This was a funny week where Clio chose a number of new recipes from Milk Street and I came home from the grocery store short one key ingredient for every recipe. (While I embrace substitutions, trying to make chicken pita sandwiches with harissa sauce when you have no pita or harissa is simply called making a different recipe.) So we made some adjustments and you will see some repeats.

Saturday: Chipotle Corn and 2-bean Chili with cornbread

I like a chili with a bunch of veggies, and this one has zucchini in addition to the corn of its title.

Sunday: Vermont curry with chicken, carrots, and potato

We had this curry mix in the pantry. It was tasty!

Monday: Spaghetti Carbonara

Just one more way for me to have breakfast for dinner. We actually used the recipe from How to Cook Everything, but there’s no link for that and I am feeling lazy. You get the idea.

I suppose since Monday will be memorial day, burgers, brats, and potato salad? This corn salad is actually one of my favorite summer cook out regulars. It is simple and unexpected.

Tuesday: Chicken tikki masala in the crockpot and naan

I did none of the extra steps (did not marinate, did not sautee) just dumped everything in the cooker and all was fine. I didn’t have tomato paste so subbed twice as much tomato sauce. Ran out of garam masala so had a mix of that and regular curry powder. All of which is to say: this recipe is forgiving!

Wednesday: Spanish shrimp and chickpea stew

New recipe. We liked it but no one jumped for joy. It probably won’t go in the binders, mostly because it gets a little expensive for a regular weeknight dinner.

Thursday: Indian vermicelli

New recipe. Everyone liked it. The peanuts are key. Not really enough protein to be a main course on its own.

Friday: Sauteed salmon with roasted asparagus

My in-laws sent us a package of fresh asparagus form their garden!

Other: Sausage and Black-eyed pea hash

You know I love a good hash, and a couple of years ago I discovered that I like black eyed peas for variety in the bean category. Don’t tell anyone, but I subbed in diced smoked bratwurst for the andouille and no one noticed. I ate leftovers of this with a friend egg on top for lunch twice!

Enjoy the long weekend, even if yours (like mine) calls for days of rain.
